Instructions
Step 1: Wrap and Cook the Bacon-Wrapped Hot Dogs
- Wrap each hot dog tightly with a slice of bacon, securing the ends with toothpicks if needed.
- Heat a grill or skillet over medium heat and cook the bacon-wrapped hot dogs for 7-10 minutes, turning occasionally, until crispy and browned. Remove toothpicks if used.
Step 2: Toast the Buns
- Spread butter on the inside of each bolillo roll or hot dog bun and toast in a pan until golden brown.
Step 3: Prepare the Sauce
- In a small bowl, mix mayonnaise, hot sauce, and lime juice to make a spicy mayo sauce.
Step 4: Assemble the Hot Dogs
- Spread a thin layer of refried beans (if using) inside each bun.
- Place the bacon-wrapped hot dog in the toasted bun.
- Top with pico de gallo, avocado slices, pickled jalapeños, and crumbled queso fresco.
- Drizzle with Mexican crema and spicy mayo sauce.
- Garnish with fresh cilantro and a lime wedge on the side.
Step 5: Serve and Enjoy!
- Serve hot with extra toppings and a cold Mexican soda or agua fresca!
Notes
- Spicier Version: Add extra sliced jalapeños or a drizzle of chipotle sauce.
- Cheesy Twist: Melt some shredded Oaxaca or cheddar cheese on the bun before adding the hot dog.
- Low-Carb Option: Serve in lettuce wraps instead of buns.
- Best Pairing: Serve with grilled corn (elote), tortilla chips, or guacamole.
