Ingredients

Scale

For the Lemon Bread:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ¼ cup fresh lemon juice
  • 2 teaspoons lemon zest
  • ½ teaspoon vanilla extract
  • ½ cup Greek yogurt or sour cream
  • ¼ cup milk (or buttermilk for extra tanginess)

For the Lemon Glaze (Optional):

  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

Step 1: Prepare the Batter

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy (2 minutes).
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in lemon juice, lemon zest, and vanilla extract.
  6. Alternate adding the dry ingredients and Greek yogurt/milk, mixing until just combined.

Step 2: Bake the Lemon Bread

  1. Pour batter into the prepared loaf pan and spread evenly.
  2. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 3: Prepare the Lemon Glaze (Optional)

  1. In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth.
  2. Drizzle the glaze over the cooled lemon bread.

Step 4: Serve & Enjoy!

  1. Slice and serve with tea, coffee, or fresh berries for a refreshing treat!

Notes

  • Make it Healthier: Swap half the flour for whole wheat flour and use honey or maple syrup instead of sugar.
  • Extra Moist Version: Add 2 tablespoons of olive oil or use buttermilk instead of regular milk.
  • Storage: Keep at room temperature for 2 days or refrigerate for up to 5 days. Freezes well for up to 3 months!
