Instructions
Step 1: Prepare the Batter
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy (2 minutes).
- Add eggs one at a time, beating well after each addition.
- Mix in lemon juice, lemon zest, and vanilla extract.
- Alternate adding the dry ingredients and Greek yogurt/milk, mixing until just combined.
Step 2: Bake the Lemon Bread
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 3: Prepare the Lemon Glaze (Optional)
- In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth.
- Drizzle the glaze over the cooled lemon bread.
