Ingredients

  • 3 pounds chicken thighs, bone-in and skin-on
  • 1 cup soy sauce
  • 1 cup water
  • 1 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup mirin (optional)
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. In a large pot, combine soy sauce, water, brown sugar, garlic, ginger, and mirin.
  2. Add the chicken thighs to the pot, ensuring they are submerged in the liquid.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce heat to a simmer and cook uncovered for 30-40 minutes, turning the chicken occasionally.
  5. Once the chicken is cooked through and tender, remove from heat.
