- 3 pounds chicken thighs, bone-in and skin-on
- 1 cup soy sauce
- 1 cup water
- 1 cup brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/4 cup mirin (optional)
- 1/4 cup green onions, chopped
- 1 tablespoon sesame seeds (optional)
Instructions
- In a large pot, combine soy sauce, water, brown sugar, garlic, ginger, and mirin.
- Add the chicken thighs to the pot, ensuring they are submerged in the liquid.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat to a simmer and cook uncovered for 30-40 minutes, turning the chicken occasionally.
- Once the chicken is cooked through and tender, remove from heat.
- Garnish with chopped green onions and sesame seeds before serving.
