Description
A festive and fluffy vanilla cake bursting with rainbow sprinkles—perfect for birthdays or any celebration!
Ingredients
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
1 tbsp vanilla extract
1 cup whole milk
1/2 cup sour cream
1/2 cup rainbow sprinkles (jimmies)
Instructions
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each. Stir in vanilla extract.
Mix in sour cream.
Add dry ingredients alternately with milk, beginning and ending with flour mixture. Mix just until combined.
Fold in rainbow sprinkles gently.
Divide batter evenly between prepared pans and smooth the tops.
Bake for 25–30 minutes or until a toothpick comes out clean.
Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
Frost as desired and decorate with more sprinkles!
Notes
* Use jimmies (rod-shaped sprinkles) to avoid color bleeding.
* Great with vanilla buttercream or cream cheese frosting!
