Ingredients

Scale
  • For the Beef:

    • 3 lbs chuck roast
    • 1 tablespoon olive oil
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon smoked paprika
    • 1 teaspoon dried oregano
    • 2 cups beef broth
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon soy sauce
    • 1 small onion, sliced
    • 4 garlic cloves, minced
  • For the Sandwiches:

    • 6 sandwich buns or hoagie rolls
    • 6 slices provolone or cheddar cheese (optional)
    • ½ cup pickles (optional)
    • ½ cup coleslaw (optional)

Instructions

1. Prepare the Beef:

  1. Pat the chuck roast dry and season it with salt, black pepper, garlic powder, onion powder, smoked paprika, and oregano.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides for about 3-4 minutes per side until browned.

2. Slow Cook the Beef:

  1. Transfer the seared beef to a slow cooker. Add sliced onions and minced garlic.
  2. Pour in beef broth, Worcestershire sauce, and soy sauce.
  3. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until the beef is fork-tender.

3. Shred the Beef:

  1. Remove the beef from the slow cooker and shred it using two forks.
  2. Return the shredded beef to the slow cooker and mix it with the juices for extra flavor.

4. Assemble the Sandwiches:

  1. Toast the sandwich buns if desired.
  2. Pile the shredded beef onto each bun. Add cheese, pickles, or coleslaw if desired.
  3. Serve warm and enjoy!

Notes

  • If you don’t have a slow cooker, you can make this in an Instant Pot (Pressure Cook on HIGH for 60 minutes, then do a natural release for 15 minutes).
  • Add BBQ sauce for a smoky, tangy twist!
  • Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
