Ingredients

Scale
  • 6 large eggs
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard (or yellow mustard)
  • 1 teaspoon white vinegar (or lemon juice)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon paprika (plus more for garnish)
  • 1 tablespoon chopped chives or parsley (for garnish)

Instructions

Step 1: Boil the Eggs

  1. Place eggs in a saucepan and cover with water.
  2. Bring to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 10-12 minutes.
  3. Drain and transfer the eggs to an ice water bath to cool for 5 minutes.

Step 2: Prepare the Filling

  1. Peel the cooled eggs and slice them in half lengthwise.
  2. Remove the yolks and place them in a small bowl.
  3. Mash the yolks with a fork until smooth.
  4. Mix in mayonnaise, mustard, vinegar, salt, black pepper, garlic powder, and paprika until creamy.

Step 3: Fill the Eggs & Serve

  1. Spoon or pipe the yolk mixture back into the egg whites.
  2. Garnish with a sprinkle of paprika and chopped chives or parsley.
  3. Serve immediately or chill in the fridge for up to 24 hours before serving.

Notes

  • Spicy Version: Add ½ teaspoon of hot sauce or cayenne pepper to the yolk mixture.
  • Healthier Option: Use Greek yogurt instead of mayonnaise for a lighter version.
  • Creative Toppings: Try adding crispy bacon bits, pickled jalapeños, or smoked salmon for extra flavor.
  • Make Ahead: Deviled eggs can be made up to a day in advance and stored in an airtight container.
