- 1½ cups cottage cheese
- 2 large eggs
- 1 zucchini, diced
- 1 red bell pepper, chopped
- 1 cup broccoli florets, chopped
- 1 medium carrot, grated
- ½ onion, diced
- 2 garlic cloves, minced
- Salt and black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8″ baking dish.
- In a bowl, whisk cottage cheese and eggs until smooth.
- Stir in all the chopped veggies, garlic, salt, and pepper.
- Pour mixture into the prepared dish and smooth the top.
- Bake 25–30 minutes until lightly golden and set in the center.
- Let rest 5 minutes before cutting into squares and serving.
Notes
Customize with your favorite veggies or add cooked chicken for extra protein. To streamline, blend cottage cheese for a custard-like texture.
