Instructions
Step 1: Make the Cake Batter
- Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar until light and fluffy (2-3 minutes).
- Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Mix in sour cream until combined.
- Gradually add flour mixture and milk, alternating between the two, mixing just until combined.
- Gently fold in rainbow sprinkles (be careful not to overmix, or the colors may bleed).
Step 2: Bake the Cake
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 3: Make the Vanilla Buttercream Frosting
- In a large bowl, beat butter until creamy (2 minutes).
- Gradually add powdered sugar, beating well after each addition.
- Mix in vanilla extract and a pinch of salt.
- Add heavy cream and beat until fluffy and smooth (2-3 minutes).
Step 4: Assemble & Decorate
- Place one cake layer on a plate and spread a layer of buttercream frosting on top.
- Add the second cake layer and frost the top and sides evenly.
- Decorate with extra sprinkles and cake toppers as desired.

- No Sour Cream? Use Greek yogurt or buttermilk instead.
